Who says keto meatballs and marinara are a package deal?  If you’re tired of the traditional, it’s time to shake things up in your kitchen with a low carb and delicious alternative.

Picture this: Ground chicken keto meatballs stuffed with mini marinated mozzarella cheese balls, swimming in a luscious low carb red pepper sauce.

When it comes to versatile food, few things can rival the meatball.  In researching the origin, “The meatball is as mysterious as the Loch Ness Monster or the last pair of matching socks in the laundry basket.”  Every culture has its version.  You name it, they’ve got it.

So, we don’t know who first rolled ground meat and spices, but we sure are thankful they did!

Here, we will stuff ’em with cheese (because who doesn’t love cheese) and serve them atop a fun sauce.  But that’s just one of many ways you can enjoy them.  We have the classic spaghetti and meatballs, meatball subs, pizza, casseroles, and even delicious meatball soup, to name a few.  Then within each category are multiple ways to make and enjoy them.  Including low carb options. 

There are (almost) endless meatball possibilities to keep you happy.  

Add this preparation to the list.  You’re sure to make these again and again.

EASY KETO MEATBALLS WITH MOZZARELLA CHEESE

There’s something that feels light about a ground chicken meatball.  Chicken can also be a bit of a blank slate in that it easily absorbs flavors from spices, herbs, and other ingredients.  When properly prepared, chicken meatballs are super tender and juicy, too.  Chicken is also (often) lower in fat making it a healthy alternative to beef and pork meatballs.  

Maybe it’s less healthy once you stuff it with mozzarella but we’re a fan of cheese here and everything in moderation, right?

SIZE MATTERS WHEN IT COMES TO A LOW CARB CHEESE-STUFFED MEATBALL

First, have you purchased a cookie scoop set yet?  Or, better yet, a few different-sized ones?

You’re going to want to invest in them if you haven’t yet.  I think this set is $20 on Amazon.  That’s a deal in my book as we use them all of the time.  The sizes are 1 tablespoon, 2 tablespoons, and 3 tablespoons.

Next, grab marinated mozzarella balls.  The ones from Trader Joe’s are delicious.   

Fill the 2 tablespoon scoop with your seasoned ground meat mixture, make a hole, put the cheese ball in the center, and then cover the cheese with the meat returning it to a meatball shape.  This is the perfect amount of meat to cheese ball ration. 

The better your technique here, the less likely the cheese will be to spill out during cooking so make sure the meat fully encases the mozzarella.

A SAUCY KETO TWIST: ROASTED RED PEPPER SAUCE

And now – for the star of this show.

Marinara is delicious.  It’s one of the most delicious and comforting sauces.  But it’s fun to shake things up a bit.  When was the last time you thought to pair a juicy cheese-stuffed chicken meatball with a delicately sweet roasted red pepper sauce?  

You’re missing out – this is good!  It’s also one of the easiest sauces to make, especially if you go with jarred roasted red peppers over making your own.

This recipe makes about 6 cups of sauce.  Cut the recipe if you don’t want that much or save it to use for other dishes.  It’s incredible underneath large pan-seared scallops.  

We weren’t lying about the easy part.  Here are the simple ingredients:  Garlic, White Pepper, Garlic Oil, and jarred or your own house-made Roasted Red Peppers.  Infuse the oil in a saucepan with the white pepper and garlic oil.  Then, add it all to a blender.  That’s it!

I guess the only real decision you need to make is how you’re going to enjoy this delicious low carb and protein-packed meal.  Are you a sauce-on or sauce-under kinda diner?

Mozzarella Stuffed Chicken Meatballs with a Roasted Red Pepper Sauce

Servings: 12 meatballs

Ingredients

Meatballs

  • 2 # Ground Chicken
  • 1 Egg
  • 2 T Olive Oil
  • 2 ea Cloves of Garlic, Minced
  • Salt and Pepper, To Taste
  • 1 t Onion Powder
  • 1 t Poultry Seasoning
  • 1/2 C Breadcrumbs More or less based on preference
  • 2 - 3 T Parsley, Finely Chopped
  • 1 12-oz Tub of Marinated Mozzarella Balls

Roasted Red Pepper Sauce

  • 4 12-oz Jars of Roasted Red Pepper Drained and each pepper dried with a paper towel
  • 1/2 C Olive Oil Garlic-infused olive oil is great here, too
  • 4-5 ea Cloves of Garlic, Minced
  • 1 t White Pepper

Instructions

  • Pre-heat the oven to 400
  • In a bowl, combine the ground chicken through the poultry seasoning
  • Add bread crumbs, low carb bread crumbs, or almond flour if you feel the mixture is too moist and needs more structure
  • Next, mix in the fresh parsley and form approximately 12 meatballs
  • Create a well in the center of each meatball and stuff it with a mozzarella ball. Then reform the meat around the cheese making sure it's. fully encased to avoid spillage when baked
  • Bake the meatballs for 30 to 40 minutes or until the internal temperature reaches 165 degrees
  • Prepare the red pepper sauce while the meatballs bake. In a saucepan, heat the oil over medium heat and add the garlic and white pepper allowing the flavors to infuse. Keep an eye on the temperature of the oil to avoid burning the garlic
  • Meanwhile, drain the roasted red peppers and blot with paper towels to remove as much of the liquid as possible and place in a blender
  • Add the infused oil into the blender and mix until well combined and the desired consistency is reached
